Ingredients

1 ½ cups almond flour

2 tbsp coconut flour

4 large eggs

½ cup melted butter or coconut oil

½ cup erythritol or monk fruit sweetener

2 tsp banana extract

1 tsp vanilla extract

½ tsp cinnamon

1 tsp baking powder

Optional: ½ cup chopped walnuts or sugar-free chocolate chips


Instructions

1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.

2. Whisk eggs until frothy.

3. Add melted butter, sweetener, banana extract, and vanilla; mix well.

4. Combine almond flour, coconut flour, cinnamon, and baking powder in a separate bowl.

5. Fold dry ingredients into wet until just combined.

6. Stir in optional ingredients if using.

7. Pour batter into loaf pan and smooth the top.

8. Bake 45–50 minutes or until a toothpick comes out clean.

9. Let cool completely before slicing.

Notes

Store in fridge up to 5–6 days, or freeze slices individually.

Use banana extract for flavor without carbs.
